2 T olive oil
2 medium carrots, peeled and chopped
1 large onion, chopped
2 cloves garlic, crushed
2 T fresh ginger, grated
2 medium potatoes, peeled, 1/2" dice
4 medium tomatoes, chopped
1 c coriander leaves, finely chopped
7 c water
2 t salt
1 t pepper
1 t cumin
1. Heat oil in a saucepan; then stir-fry carrots, onions, garlic, and ginger over medium heat for 8 minutes. Add potatoes, tomatoes, and coriander leaves and stir-fry for another 5 minutes.
2. Add remaining ingredients and bring to a boil. Cover and simmer over medium-low heat for 1 hour or until vegetables are well-done.
