Ingredients:
1 T olive oil
2 medium onions, chopped
4 cloves garlic, crushed
4 T coriander leaves, finely chopped
2 c chickpeas, cooked
2 c tomato juice
6 c water
1/4 c white rice, rinsed
2 t salt
1 t pepper
1 t allspice
1/8 t cayenne
1. Heat oil in saucepan, then saute onions and garlic over medium heat for 10 minutes. Add remaining ingredients and bring to a boil.
2. Cover and cook over medium heat for 25 minutes or until rice is cooked.
